Menu Ideas for School Lunches

It's that time of year, when we all prepare to start making lunches again. (sigh!).

Hopefully I can give you some ideas to make the lunches more enjoyable!

  • Cut up vegetables (cucumber, celery, carrots, peppers) and dip (hummus, babaghanoush, caesar dressing, ranch dressing, mayonnaise, full fat sour cream, pesto, guacamole)

  • Mini sandwiches made of cucumber, cheese and protein (chicken/hard boiled egg slices/tofu, etc)

  • Tuna with mayonnaise and pickles on cucumber slices

  • Roasted chicken dipped in yogurt, with roasted vegetables (broccoli, green beans, brussel sprouts, etc).

  • Paleo pancakes (see this post for recipe)

  • High fat plain yogurt parfait with cut up fruit and seeds (sunflower, pumpkin, sesame, chia, flax, hemp, etc).

  • Air-popped or stove-top, popped pop-corn (not microwave!)

  • Cut up fruit to dip in yogurt or a seed butter (sunflower seed butter or pumpkin seed butter - 100% seeds, with no sugar added).

  • Pepperettes and cheese

  • Lettuce wrapped tuna salad, egg salad, or chicken salad; or served with cut up vegetables like cucumber, peppers, and celery.

  • Hard boiled eggs mashed with avocado (adding lemon and salt makes it delicious!), eaten with veggie sticks or cucumber slices.

  • Hard boiled eggs with cheese slices.
